BERRY HANDMADE PIE

A pie is a baked dish which is usually made of a pastry dough casing that contains a filling of various sweet or savory ingredients. Sweet pies may be filled with fruit (as in an apple pie or Berries).


Servings: 1 Pie

Prep time: 15 mins

Cook Time: 40 mins

Total Time: 55 mins



Ingredients

  • 2 cups mixed berries
  • 1/2 cup orange juice
  • 1 cup sugar
  • 1 vanilla bean
  • 1 tsp cornstarch 
  • 1 roll puff pastry 

Instructions

For Berry Compote:
  1. Add mixed berries to a pan on medium heat. 
  2. Add sugar and caviar of 1 vanilla pod to the berries.
  3. Let it soften until it releases its juice.
  4. Once bubbling add the orange juice.
  5. Mix 1 tsp cornstarch in 2 tbsp cold water.
  6. Mix until it dissolves and add it to the pan.
  7. Let it simmer until it thickens and take it off the heat. 
  8. Let it cool for at least an hour before making the pies
Pies:
  1. Preheat oven to 180° C or 350° F for 15 mins
  2. Make sure the pastry is cold so it can hold it's shape better.
  3. Cut the pastry in the desired shape (Christmas tree, star, gingerbread man)
  4. Fill 1 tsp berry compote and close the pastry. Seal the edges with a fork.
  5. Cut holes on the upper pie layer
  6. Brush the top layer with beaten egg or milk and bake for about 20 - 25 mins or until the pies are golden brown.
