 PANCAKES

A pancake (or hot-cake, griddlecake, or flapjack) is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter. It is a type of batter bread. Archaeological evidence suggests that pancakes were probably eaten in prehistoric societies.

Ingredients

  • 2 cups Flour
  • 4 tsp Baking powder
  • 2 tbsp Granulated sugar
  • 1 tsp Salt
  • 2 Eggs
  • 1 ¼ cup Milk
  • 2 vanilla beans (split and vanilla caviar scraped)
  • 4 tbsp Butter (melted)

Instructions

  1. Whisk the flour, baking powder, sugar and salt in a large bowl.
  2. In a small bowl, whisk the eggs, milk, vanilla and melted butter, then slowly add the liquid to the dry ingredients, whisking until just combined.
  3. Using a ladle, pour the batter, one-sixth at a time, onto a medium-hot greased griddle or skillet.
  4. Cook each pancake until bubbles form on the top around the edges.
  5. Peek underneath to see if the bottom is golden brown and once it is, flip the pancake and cook until the second side is golden.
  6. Use a spatula to transfer pancakes to plates and serve with butter, syrup, powdered sugar, cinnamon, fresh berries or fruit jam.
